Christmas Oatmeal Raisin Cookies Recipe
These oatmeal raisin cookies smell like Christmas because of the different spices used. These cookies will also help you partake in the holiday spirit with less of the holiday bulge.
INGREDIENTS
- 1 cup of margarine
- 1 cup packed light brown sugar
- 1/2 cup white sugar
- 2 egg whites and 2 teaspoons of oil
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3 cups steel cut oats
- 1 cup raisins
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the margarine, brown sugar, white sugar, egg whites and oil, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!
Chocolate Peppermint Balls Recipe
INGREDIENTS
- 1 (18.25 ounce) package devil's food cake mix from Duncan Hines or Betty Crocker
- 1/2 cup margarine
- 1 egg
- 1/2 teaspoon peppermint extract
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, beat together the margarine, egg and peppermint extract until smooth and creamy. Stir in the cake mix. Roll teaspoonfuls of dough into balls and place them 1 inch apart onto prepared cookie sheets.
- Bake for 8 -10 minutes in the preheated oven. Watch very closely. when they start to crack they are done.
